It is made excellent with traditional spices and the indigenous bean, called moth or gram flour. Alao bhajia, made with potatoes, is another popular variation. Bikaner has a lot of flavor. Groundnut oil is used in the traditional Indian snack known as Haldiram’s Sev Bhujia.
